Harvest Monday March 18, 2024

It’s time once again for Harvest Monday, where we celebrate all things harvest related. It was a no-harvest week last week as normal life around here ground to a screeching halt. My wife developed a sore throat and a fever and then tested positive for Covid 19. We have both been vaccinated and boosted several times, and thankfully her symptoms have been mostly mild. We have been isolating as best as we can in our house, and I have been masking up whenever we are in the same room. I have no symptoms and have tested negative twice, so I am hoping I escaped catching it myself. Soup has been on the menu often, since it is easy on her throat. There is good news though – we found the first asparagus spears poking out of the ground! It’s running a bit earlier than last year, and the first ones are always a welcome sight here.

I took advantage of warm temps this week to do a little planting in the greenhouse. My wife came out to get a little sunshine and caught me hard (or hardly) at work. She has only ventured outside the house a few times since she has been sick,  mostly to check on the garden and flowers.

While in the greenhouse I potted up containers with arugula, mizuna, purple pac choi and baby leaf kale. I harvest these by the ‘cut and come again” method when the leaves are small, where they add flavor and color to salads and soups.

There are other signs that spring is just around the corner. We planted some new daffodil bulbs last fall around our magnolia tree, and they are starting to bloom. This one is a small-cupped variety with orange and yellow blooms. It’s a small clump now but in a couple of years it should spread out and give some early color before the tree leaves out.

After a week of soups and other bland foods, I was craving something spicy so I baked up a batch of Two-Bean Enchilada Casserole for my dinner Saturday night. It featured my homemade sauce using our frozen tomato sauce and homegrown chile powder. It ticked all the boxes for me, while my wife enjoyed a milder dinner of baked potato.
