Harvest Monday March 4, 2024

It’s time once again for Harvest Monday, where we celebrate all things harvest related. My only harvest again last week was green onions from the greenhouse planting. The greenhouse lettuce should be ready to harvest soon, and I have more greens started for  spring plantings. Thankfully we have lots of veggies stored from last year, and we have been enjoying them often.

Every summer I always freeze lots of veggies for use in soups. Last week  I cooked up a batch of vegetable soup that featured green beans, yellow squash, tomatoes and cubes of frozen kohlrabi from last year’s garden. I added a bit of pasta to soak up the homemade broth, and some cranberry beans I had cooked up for protein. Served with some of my Ligurian Focaccia bread, it made for a hearty meal, and the leftovers the next day were even tastier!

Another meal from last week featured sweet potato hash and ‘fried’ collard greens along with Skillet Parmesan Chicken. The collard greens were from an earlier harvest, and I chopped them up and sautéed in olive oil until tender and a bit browned around the edges. It’s one of my favorite ways to prepare collards, and my wife and I both enjoyed every bite of them! The fall planting of collards is starting to make new growth, and I am hoping to cut some of them soon.

In other news, in the shade garden, the hellebores are starting to put on a show for us. We have several planted, and they brighten up the area in early spring. The deer and rabbits also leave them alone, which is a big plus since they tend to eat a lot of things we plant. They are blooming a bit later than last year, but otherwise right on schedule.

And the early daffodils continue to provide some much welcome color. I can see these out the window when I am working on my computer – even as I am typing this. We have later varieties planted too that are coming up and will be blooming soon.

    We freeze lots too, I’ll be freezing parsnips and leeks soon and what are left of the onions as the stored ones will soon begin to shoot and the overwintering ones won’t be ready for a while.

  3. I agree, that homemade soup often tastes better the next day. The hellebores are lovely and always heartening. Sturdy little bits of joy late winter.
