Chicken Chipotle Taco and Burrito Filling

Taco and burritos are frequently on the menu here at Happy Acres. We almost always have some kind of a homemade burrito in the freezer, waiting to be heated up for a quick and filling meal. Our favorite fillings usually take the form of either beans or meat. I’ve been making some variation of this meat filling for many years now. I have used canned tomato sauce, and even Ro-tel seasoned tomatoes in the past. But now that I make my own homemade Freezer Tomato Sauce, that is what I usually use.

Chipotles are smoked jalapeno peppers, and you can usually find them canned in adobo sauce in most supermarkets or ethnic groceries. If you can find chipotle powder, that also works well in this recipe. The idea is to add a little bit of the smoky taste, and some heat. If that’s not your cup of tea, the chipotle can be omitted.

If you’re in a hurry, a can of Ro-tel will work in place of the tomato sauce and chopped onions. The recipe is pretty flexible, and I have made it with ground beef or ground turkey before – even leftover Thanksgiving turkey. Shredding up some leftover roast beef also makes for some nice taco filling. Use your imagination, and let this recipe be a starting guide for your own taco and burrito creations!

1 tbsp cooking oil
1/2 cup chopped onions
3 cups chicken breasts, cooked, skinned and boned
2 cloves minced garlic
1 chipotle pepper in adobo sauce, chopped
1 cup tomato sauce (no salt added)
1 tsp chili powder
1 tsp ground cumin
dash salt
1/2 cup water

1. Chop chicken into small pieces, shredding meat along the grain.
2. Heat oil in saucepan, saute chopped onion until soft, about 5 minutes.
3. Add rest of ingredients. Simmer uncovered for 20-30 minutes until thickened.

Servings: 8 (serving size about 1/3 cup)
