It’s time once again for Harvest Monday, where we celebrate all things harvest related. Lettuce is coming back and growing in the greenhouse, and I managed to cut a couple of heads of the Salanova Red Butter. It is time to start more seeds for the spring crop, something I need to add to my to-do list! I started seeds for parsley and eggplant last week, and the eggplant is already coming up. I also need to sow some seeds for greens like mizuna, baby kale and arugula.
I made a big cutting of collard greens before the big freeze came a few weeks ago. They weighed right at two pounds, and I froze a few for later and saved the rest for fresh use. The collard plants are putting on new growth too, though a few plants likely didn’t survive the recent bitter cold weather. It looks like quite a few did make it though, and a spring flush of leaves will be welcome in the kitchen.
We still have lots of sweet potatoes in storage, and I cooked up a batch of Rosemary Roasted Sweet Potatoes last week to go with a fish dinner. It is one of my favorites ways to cook them, and I used a mix of orange Beauregard and white Bonita for this batch. Both varieties are moist and sweet, and work well together for sure.
My latest sourdough bake used 1/3 heirloom French Rouge de Bordeaux flour, and it made a tasty and sturdy base for our tuna melt sandwiches and croutons for soups and salads. I baked it in our Breadtopia clay baker, which always makes for a crispy crust. The Rouge de Bordeaux flour has a lovely flavor, and it is one of my favorite wheat varieties for bread baking.
