Welcome to Harvest Monday, where we celebrate all things harvest related. I got a few harvests here last week. My wife celebrated her birthday on Saturday, and requested a salad for lunch. So I cut some frilly Ezrilla and a bit of smooth butter lettuce from the greenhouse just for the occasion. I dressed it up with a dark cherry balsamic and walnut oil vinaigrette and a few dried cherries. This is one of her favorite of our salad creations, and I was happy to oblige.
And I cut a few leaves of curly Darkibor kale to go in a soup she made last night. I love to use kale in soup since it holds up well.
In one more tiny harvest, I chopped a bit of I’itoi onion and flat leaf parsley from the greenhouse to top a dish I made with Christmas Lima beans, marinated artichokes and roasted carrots. Dressed with a little olive oil and a few springs of oregano I have growing in a pot, it made a filling meal. This sounded like a somewhat unlikely combination when I read it on the Rancho Gordo blog, but I have learned to keep an open mind. I added the roasted carrots to make it a bit more substantial, and my wife and I both declared it a winner.
And let me announce a temporary change for Harvest Monday. Michelle (From Seed To Table) has again graciously agreed to take over hosting Harvest Monday next month (January, 2019) to give me a little break. Those fresh greens are marvellous and your Christmas Lima Beans are spectacular – i have not seen beans that big in my whole life and so pretty too. I haven’t harvested anything to share this week from the garden plot, but wanted to come by and wish you and all your readers, esp. contributors to Harvest Monday a Happy New Year. I think we need to make more of an effort with salad greens next year.
The salad made for your wife sounds wonderful and reminds me I have a handful of dried cherries in the pantry. I have a salad in mind for lunch. Happy that Michelle can give you a short break as host. Thank you for your commitment to this forum again in 2018.
I haven’t had Christmas Limas in a long time. They are such a tasty bean, I think I’ll have to go buy some! Lynda’s birthday salad sounds wonderful. I do love to use nut oils in my salad dressings. I bought some really good hazelnut oil recently and have been bingeing on that since it doesn’t keep for very long. Enjoy your break from hosting in January!
The salad leaves look incredible. I have some growing but they’re not as large or lush as that.
I’m not very familiar with Lima beans, they look a bit like runner beans…the dish sounds delicious, Jan and I need to up our bean intake. Many thanks for hosting Harvest Monday for another year, I hope to participate more regularly again in 2019.
We’re always looking for ways to put beans on the menu, and this was a surprise winner, Lima beans are a separate species of bean, and popular here in the southern U.S. since they love the heat. The Christmas Lima really has a lovely flavor,

Those greens look delicious! I’m looking forward to the day when I have a greenhouse (or perhaps more realistically a cold frame!) so that I can extend my greens harvest on both ends of the season.
