Harvest Monday

It’s hard to believe it’s already May! This spring is going by too fast. It will be hot and humid here all too soon. I want to enjoy our normally brief spring weather while it lasts.

We did get much needed rain this week (over 4 inches), and the veggies certainly loved it. The asparagus really responded, giving us a total of 2.3 pounds for the week, and 13 ounces one day alone! This is our first full harvest year for this new patch planted in 2007, and so far we have gotten 7.5 pounds from it. I am very pleased with the results.

One of the things I did with the harvest this week was make some Sundried Tomato Pesto with last year’s dried tomatoes and some freshly harvested arugula. Ali over at Henbogle recommended it, and I’m telling you, her recipe is truly awesome! I had never thought about using arugula in pesto, and I have to say the sweet flavor of the tomatoes really works well with the spicy taste of the arugula. In addition to eating the pesto with a spoon, we used it to make these Pita Pizzas last week with our homemade pita bread.

I spread the pesto over the pita bread, then topped it with some prosciutto ham and a bit of romano cheese. I baked them on the pizza stone for 7-8 minutes, then topped them with some fresh arugula and we had a wonderful gourmet lunch!

Along with the asparagus and arugula I also harvested some scallions and radishes this week, as well as lettuce and spinach. The Space variety of spinach is still hanging on, after all the others have bolted. I should get one more light harvest before I pull the plants. I also have a lot of lettuce that is ready to pick, so I plan on harvesting it tomorrow and taking some to the soup kitchen.  We should be able to make a nice salad with it there.

The new coldframe has kohlrabi that is nearing harvest stage, as well as radicchio and endive that are sizing up nicely. The endive should be ready to start harvesting in a week or two.

Not participating in any harvest activity this week was Sidd, the resident alpha male cat here at Happy Acres. He stopped, umm, meditating just long enough to pose for this photo.

    What, you made my recipe and didn’t invite me over to share? Sheesh!
    I’m glad you enjoyed it, it makes my mouth water just thinking about it! Must. Make. Pizza.

    Your harvest looks amazing. Please share some recipes for kohlrabi, it is one of those veggies I have just never come to love…but probably should. Give Sidd some love from me, he is one gorgeous kitty!

      Well, we made it again yesterday, and again made pita pizzas. The pesto is our New Favorite. There’s still some in the frig, but you better get here fast!

      We mostly eat the kohlrabi raw, added to salads or with a yogurt dip. I’m going to branch out this year and try it in some other ways. If I find any keepers I will definitely share. I’m thinking maybe trying something Indian to spice it up a bit, since the kohlrabi itself is pretty mild tasting.

    These cold frames look so good! And so does the pizza.

    Your asparagus bed is really inspiring me. November is the time to plant asparagus in my climate. Gotta have a perennial bed ready by then. I want asparagus too!

    Tomatoes and arugula do work great together. My asparagus seeds still did not germinate; I think I will have to try sowing it next year again…

    Nice coldframes. I would really love some for really early greens and carrots. Maybe some year. It is either that or hoops with plastic that aren’t quite as good.

  7. Pesto and prosciutto sounds positively perfect, although I’ve never tried making pesto with Arugula, so I’m intrigued. Pizza…just one more reason I need to try making some pita bread soon!

    Your coldframe of lettuce looks so good. I’m impress but how efficiently you’ve used the small space available. This is something that I definitely need to work on.

    I’m telling you, Villager, those cold frames look like magazine shots. Beautiful! And thank you for the recipe recommendation. As I read I thought, “I love sundried tomatoes, I love arugula. How come I never put them together before?” What a creative cook that friend of yours must be. 🙂

    Sidd reminds me of a wild tom who took up residence at my parents’ place when I was in college. He may not help with the harvest in the way you’re thinking, but does he help keep the critters out of the garden? My Leo “harvested” another interloper today.
